Recipes are an odd fit for yorkrules. Julie My Love is our in-house gourmand, but she doesn’t have a website, so Cookoo is a unique opportunity for us to work together creatively. My self-assigned responsibilities are typically restricted to naming and photographing whatever she brings to the table.
Spaghedilla! (because you can’t spell Spaghedilla! without !) is a rare exception. I’ve taken the reins of the stove top, and most of the leftovers in the fridge, to produce this latest creation in the yorkrules test kitchen. (JML, who did help with improving the dish’s presentation, went so far as to pronounce it, “Not bad.”)
Spaghedilla!
- 2 flour tortillas
- Spaghetti & meatballs (previously prepared)
- Ground beef with taco seasoning (previously prepared)
- Shredded mozarella cheese
- Parmesan cheese
- Tapatio hot sauce
- Guacamole
Place a handful of mozarella cheese, a clump of spaghetti & meatballs and several spoonfuls of ground beef between the tortillas. Fry to a rich golden brown on both sides. Remove from the oil (microwave for about 30 seconds if the contents aren’t yet sufficiently hot.) Slice into quarters. Garnish with parmesan, hot sauce and guacamole. Serves 1 - 2 people.
